A good friend shared this recipe with me so one of my kids took it upon herself to try it out so I thought I’d share with you all.
All you need is:
- 1 Large Egg
- 1 Cup Peanut Butter
- 1/2 Cup of Stevia
Mix these three ingredients while the oven is being heated up to 350 Degrees. Roll the dough into 1″ balls and place on parchment paper onto a cookie sheet. Once they’re placed onto the sheet you can add the famous peanut butter cookie stripes and bake for 15 minutes.
Theses were the ingredients I had in my pantry that we used. This prep was very fast and easy. But this recipe only makes 11 on our count. It said 15 but we got 11 successful cookies.
Be very careful taking these cookies off of the cookie sheet when they’re done as they are very fragile. If you try to eat these hot, they will crumble and make a huge mess. Falls apart like sand would in your hands. The cooler the become, the easier it is to handle.
If you look closely, you can see the cracks in some of these cookies. This was just done while transferring the cookies from the cookie sheet to the cooling rack.
Now before you go diving into these cookies, make sure they fit into your meal plan. But look at all the positives in this recipe. 4.2g of Protein per cookie! That’s fantastic. Perfect for a Keto Plan and great for any child and family being healthier. But may not fit into a standard meal plan depending on your goals and plan. Just make sure you have wiggle room on your plan!
You will want a glass of milk with these cookies. They’re very thick but my kids loved them!
