I find that in the winter months vegetables taste so gross. They’re out of season and lack the quality taste we all grow to love in the summer months. And let’s face it. Frozen vegetables get old. I wanted something different and playing around with different ways to prepare vegetables, this recipe is my favourite.
I wanted a recipe where I am excited to eat my vegetables and this is doing it for me. Better yet, I can prepare this once a week and it prepares enough for both my husband and I. One year ago today I was medically released from the Canadian Armed Forces as a Military Police Officer. I sustained a life altering back injury while on duty. I now have an implant in my back which makes me “Undeployable”. I LOVED my time in the service and try not to let my injury dictate my life or my limits. It’s not always easy and sometimes I take it day by day. But that’s all I need it one day more than the last. November 11th will always be a special day for me. It allows me to reflect on my time serving my country and to be grateful for all the men and women who I served with and the thousands of men and women who still continue to serve and those before us who served and gave their lives so that we may enjoy the freedoms we enjoy and likely take for granted every single day.
