I remember years ago when I spoke to my now good friend Nadine Moxon, telling her that my then “Military” physique was as good as I thought I could get.  And I distinctly remember her laughing at me and saying, “No way Mate, You could get WAY leaner!”  Haha.  Love you Nadine!  But I share this story to tell you that we all get into the “Basic Sally” Mentality and get stuck.  We get in our own way and forget the basics as to what it takes to succeed. Getting Creative With Vegetables

I find that in the winter months vegetables taste so gross.  They’re out of season and lack the quality taste we all grow to love in the summer months.  And let’s face it.  Frozen vegetables get old.  I wanted something different and playing around with different ways to prepare vegetables, this recipe is my favourite.

I wanted a recipe where I am excited to eat my vegetables and this is doing it for me.  Better yet, I can prepare this once a week and it prepares enough for both my husband and I.  Now if the kids dive in, that’s okay, but I’d have to prepare twice as much or two batches in a week. Against All Odds

Have you ever had that one moment where you thought to yourself, “This is it, life is over”.  Not in the literal sense but in the metaphorical sense?  Maybe you had a death in the family which devastated you.  Maybe you didn’t get that promotion at work your family depended on.  Maybe you had a severe car accident that paralyzed you.  So many things in life we have no control over and let’s face it, life is hard.
