I wanted to go ahead and share a recipe that’s healthy and that my kids LOVE. Depending on your room for carbs you may have to adjust the pocket or just do without it all together.
Ingredients:
- Cucumber
- Tomato
- Lettuce/Spinach
- Bell Peppers
- Lean Meat (Chicken, Turkey, Tuna, Salmon, Bison [ham for kids])
- Any other Vegetable you desire
- Pitas
- Dressing (I love Bolthouse Farms Classic Ranch – 45 Calories per serving)
Make sure you get the pitas that are meant to be split. You want the pocket part to make this meal a success. Split one pita into 2 by cutting it down the centre.
I prefer vine tomatoes but you can get any kind you prefer. All you have to do is slice up your favourite vegetables to add to your pocket.
Pick your desired meat. Maybe something lean for you and the hubby and something less lean for the kids. Or pick your favourite for this meal and you all eat the same. This is just an easy recipe to be flexible for any meal plan. If your plan doesn’t allow for a pita. Maybe a low carb wrap will be a good alternative or bust out a bowl and make a salad.
This is a family favourite low calorie dressing. You can add this or any family favourite dressing. All depends on your meal plans requirement. But again easy for you to use what you need for your needs and have the family add whatever dressing they love.
This recipe has been a family favourite for years and packs well for lunches and keeps well in the fridge and is little to no cook. Buy a rotisserie chicken and use that meat if your busy or deli meat for the family. I promise your family will love this recipe.
